Are there any foods or dishes that remind you of certain times of the year or certain places? When you eat them you are immediately transported to that time or place? There are a LOT that do that for me and one of them is this Bean & Veggie Salsa.
Eating a bowl of this is like eating a bowl of summer! Or a bowl of the beach! But in a good, non-sweltering/non-sandy kind of way, of course. 🙂 So fresh and yummy tasting!
I first had this years ago (I was probably in high school) at my grandparents house. My grandma had made it and I was surprised that I liked it so much because I wasn’t overly fond of many of the ingredients at that time. I asked her for the recipe and have been making it ever since. I think she originally got the recipe from a magazine, but I’m sure she put her own special “twists” on it as she always does. 🙂
I would say this is half really healthy and half could-be-a-little-healthier. This dish has a lot of fresh veggies in it which is so great but it also contains a lot of canned food which is not as great. I really want to try making this someday with ALL fresh ingredients! I’m sure it will only taste better!
But for now, the easy, original version!
1 can black beans
1 can dark kidney beans
1 can whole kernel corn
1 can chopped tomatoes with green chili peppers
3 bell peppers (any color)
1 tablespoon Worcestershire sauce
3 tablespoons balsamic vinegar
1 teaspoon sugar
1 teaspoon finely chopped garlic
2 tablespoons chopped fresh parsley
1 teaspoon dried basil
Drain and rinse the black beans, kidney beans and corn in a colander and dump into a large bowl. Drain the tomatoes and put in the same bowl.
Chop the onions and bell peppers and place in the bowl with the beans, corn and tomatoes. A food chopper makes easy work of this.
In a small bowl, whisk together the dressing ingredients.
Add to the bean/veggie mixture and stir well. Sometimes I just dump everything into a large freezer bag to mix it and usually end up storing it that way. 🙂
Serve with chips and enjoy!
